Foil Dinner

In honor of camping this weekend, here's a family favorite while outdoors. The recipe is for two people.

Coals or Embers
Aluminum Foil
2 Chicken Breast
2 Small Potatoes
2 Large Carrots
1 Medium Onion
1 Can Cream/Chicken Soup
Salt and Pepper

Prep your fire and push aside embers or prep your coal (if you don't know how to use coal, ask).

Tear off a piece of aluminum foil. Keep in mind all that is going into your foil - then you have to wrap it closed. So you'll need a decent size.

For each person:
Season your chicken with salt and pepper, lay in middle of foil. Dice potato, carrot and onion; spread over chicken. Dollop up to half a can of soup over vegetables. (right here you can omit the soup if you want to or substitute with a T of butter) Fold foil and seal well. Using tongs (or careful with your hands) place foil over coals/embers. Let cook 15 min. Flip and cook 10 minutes more.

Check the chicken to make sure it's firm - cooked. If needed, place back on coals for a few more minutes. Use tongs or mitts to take the foil off the coals. Open and eat!
